Ingredients for marinating the chicken:

Malaysian Sambal Shrimp Pest Ayam Brand 4 Tablespoon

chicken thigh 2 Piece

Shallots 1 head

finely chopped garlic 4 lobe

Dried Garcinia Cambogia 2 pieces (if not using tamarind juice 2 tablespoon)

granulated sugar ½ Tablespoon
-
drinking water 1 measuring cup
-
oyster sauce ½ Tablespoon
-
soy sauce 1 Tablespoon
-
black pepper 1 teaspoon
-
Coriander Powder 1 teaspoon
-
curry powder 1 teaspoon
-
seasoning powder 1 teaspoon
-
vegetable oil
Coconut Rice Ingredients:

ข้าวหอมะลิ 2 measuring cup

Coconut milk mixed with coconut water Ayam brand 1 ½ measuring cup

Shallots ½ head
-
Lemongrass, cut lengthwise, amount as desired
Side dishes for rice:
-
Malaysian Sambal Shrimp Pest Ayam Brand 1 tablespoon for dipping

fried peanuts 1 – 2 Tablespoon

Fried small fish
-
boiled egg 1 - 2 bubble

cucumber
Method :

Marinate the chicken in a mixing bowl. Add all the ingredients, mix well and marinate for a long time. 30 - 45 minutes for the sauce to seep into the meat.

Heat a pan, add oil, and fry the marinated chicken until golden brown and set aside.

Cook coconut milk rice, add rice, followed by coconut milk, sliced shallots and lemongrass in the rice cooker. Cook until cooked.

Ladle rice and fried chicken on a plate. Served with sambal sauce, fried peanuts, crispy fish, boiled egg and cucumber.
